Description

Delicious pancakes with a crispy exterior and a creamy, tender sweet potato interior, perfect for any meal.


Ingredients

Scale
  • 2 cups grated sweet potatoes
  • 1/2 cup all-purpose flour
  • 1/4 cup water
  • Salt to taste
  • Pepper to taste
  • 2 green onions, chopped
  • Oil for frying
  • Optional: 1 tablespoon cornstarch or 1 egg

Instructions

  1. Grate the sweet potatoes and squeeze out most of the liquid with a towel.
  2. Toss the grated potatoes with flour, water, salt, pepper, and green onions until combined.
  3. Heat oil in a skillet over medium-high heat.
  4. Spoon or press 2-3 tablespoon mounds of batter into the pan, flattening them to 1/3–1/2 inch thick.
  5. Cook undisturbed for 3–4 minutes until golden and crisp, then flip and cook the other side.
  6. Drain on a wire rack and serve hot.

Notes

Ensure to squeeze out excess moisture from the potatoes for optimal texture. For extra crunch, finish under a hot broiler for 30–45 seconds.
