- 2 ripe bananas, mashed
- 1 cup fresh strawberries, chopped
- 1/4 cup maple syrup or agave nectar
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 1/2 cups gluten-free flour blend
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix together the mashed bananas, maple syrup, applesauce, and vanilla extract.
- In another bowl, combine the gluten-free flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Gently fold in the chopped strawberries.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool for 10 minutes in the pan before transferring it to a wire rack to cool completely.
Notes
Serve warm with vegan butter or nut butter, and can be stored at room temperature for up to three days.
