Description

A delightful and nutritious vegan and gluten-free treat perfect for breakfast or as a snack, made with ripe bananas and fresh strawberries.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup fresh strawberries, chopped
  • 1/4 cup maple syrup or agave nectar
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 1/2 cups gluten-free flour blend
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the mashed bananas, maple syrup, applesauce, and vanilla extract.
  3. In another bowl, combine the gluten-free flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  5. Gently fold in the chopped strawberries.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let it cool for 10 minutes in the pan before transferring it to a wire rack to cool completely.

Notes

Serve warm with vegan butter or nut butter, and can be stored at room temperature for up to three days.
