Ingredients

- 2 salmon fillets
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1 mango, diced
- 1/4 red onion, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt, to taste
- Optional: cornstarch for dusting
Instructions
- Make the salsa: Toss diced mango, red onion, cilantro, and lime juice with a pinch of salt. Let rest while you cook.
- Pat salmon dry and season with salt and spices; brush with a mixture of soy sauce and maple syrup. Let sit for 5 minutes.
- Heat a skillet until very hot and add oil. Place salmon skin-side down and press gently to ensure contact.
- Cook until the skin is crisp and the sides turn golden (approx. 4–6 minutes). Flip, spoon glaze over top, and cook until the center is velvety.
- Plate with a scoop of mango salsa on top or to the side. Serve immediately.
Notes
Don’t overcrowd the pan for optimal crispiness. Use high-heat oil and flip the salmon only once for a perfect sear.
