Instructions
- In a bowl, mix the rolled oats, almond butter, honey, and protein powder until it forms a dough that holds together.
- Add the peppermint extract and mini dark chocolate chips, stirring until evenly distributed.
- If the mixture feels too dry, drizzle in some almond milk until the texture is just right.
- Roll into bite-sized balls (about 1 inch) and place them on a lined baking sheet.
- Pop them in the fridge for 30 minutes to set up.
