Description

Deliciously soft and chewy pumpkin spice cookies infused with Earl Grey and a hint of lavender, topped with creamy frosting.


Ingredients

  • 3 bags Earl Grey Tea (or 3 tablespoons loose leaf)
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup Granulated White Sugar
  • 1/2 cup Unsalted Butter (softened)
  • 1 piece Egg (at room temperature)
  • 1 teaspoon Vanilla Bean Paste (or vanilla extract)
  • 1 tablespoon Culinary Lavender (dried)
  • 8 ounces Cream Cheese (softened)
  • 2 cups Powdered Sugar
  • a few drops Purple Food Coloring (optional)

Instructions

  1. Preheat your oven and prepare a baking sheet.
  2. In a mixing bowl, combine the softened butter and granulated sugar until creamy.
  3. Add the egg, vanilla bean paste, and steeped Earl Grey tea into the mixture and combine well.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and lavender.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Drop spoonfuls of dough onto the prepared baking sheet.
  7. Bake in the preheated oven for 10 minutes or until the edges are lightly golden.
  8. Allow to cool before frosting with cream cheese frosting.

Notes

To enhance flavor, use fresh Earl Grey tea and adjust the amount of lavender to taste.
