Deliciously soft and chewy pumpkin spice cookies infused with Earl Grey and a hint of lavender, topped with creamy frosting.

- 3 bags Earl Grey Tea (or 3 tablespoons loose leaf)
- 1 cup All-Purpose Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1 cup Granulated White Sugar
- 1/2 cup Unsalted Butter (softened)
- 1 piece Egg (at room temperature)
- 1 teaspoon Vanilla Bean Paste (or vanilla extract)
- 1 tablespoon Culinary Lavender (dried)
- 8 ounces Cream Cheese (softened)
- 2 cups Powdered Sugar
- a few drops Purple Food Coloring (optional)
Instructions
- Preheat your oven and prepare a baking sheet.
- In a mixing bowl, combine the softened butter and granulated sugar until creamy.
- Add the egg, vanilla bean paste, and steeped Earl Grey tea into the mixture and combine well.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and lavender.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Drop spoonfuls of dough onto the prepared baking sheet.
- Bake in the preheated oven for 10 minutes or until the edges are lightly golden.
- Allow to cool before frosting with cream cheese frosting.
Notes
To enhance flavor, use fresh Earl Grey tea and adjust the amount of lavender to taste.
