Ingredients
- Cottage Cheese
- Rolled Oats
- Fresh Blueberries
- Lemon Juice and Zest
- Honey or Maple Syrup
- Salt
Instructions
- Blend together cottage cheese, oats, blueberries, lemon juice, honey, zest, and salt in a bowl until combined, keeping blueberries intact.
- Form the mixture into small bites, about the size of golf balls.
- Heat a non-stick skillet with a bit of oil and pan-fry the bites until golden brown, about 3-4 minutes on each side.
- Let them cool for a minute to achieve the melty center.
Notes
Don’t overcrowd the pan for better crispiness. Bake at 375°F (190°C) for 15-20 minutes if you prefer baking instead of frying.
