Description

Crisp on the outside and creamy on the inside, these protein bites are bursting with juicy blueberries and a hint of lemon.


Ingredients

  • Cottage Cheese
  • Rolled Oats
  • Fresh Blueberries
  • Lemon Juice and Zest
  • Honey or Maple Syrup
  • Salt

Instructions

  1. Blend together cottage cheese, oats, blueberries, lemon juice, honey, zest, and salt in a bowl until combined, keeping blueberries intact.
  2. Form the mixture into small bites, about the size of golf balls.
  3. Heat a non-stick skillet with a bit of oil and pan-fry the bites until golden brown, about 3-4 minutes on each side.
  4. Let them cool for a minute to achieve the melty center.

Notes

Don’t overcrowd the pan for better crispiness. Bake at 375°F (190°C) for 15-20 minutes if you prefer baking instead of frying.
