Description

A delicious balance of tangy and sweet flavors with succulent chicken served over fragrant jasmine rice.


Ingredients

  • 4 pieces Chicken Breasts (boneless, skinless)
  • 3 tablespoons Honey (for marinade)
  • 2 tablespoons Lime Juice (freshly squeezed)
  • 1 tablespoon Lime Zest
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ground Cumin
  • to taste Salt
  • to taste Pepper
  • 1 cup Jasmine Rice (or basmati)
  • 2 cups Chicken Broth
  • 2 pieces Avocado (diced)
  • 1 small Red Onion (finely chopped)
  • 1/4 cup Fresh Cilantro (chopped)
  • 1 tablespoon Olive Oil
  • 4 pieces Lime Wedges (for garnish)

Instructions

  1. Mix honey, lime juice, lime zest, garlic, cumin, salt, and pepper in a bowl.
  2. Coat the chicken breasts in the marinade. Let them sit for at least 15 minutes.
  3. Cook the jasmine rice in chicken broth according to package directions.
  4. Heat olive oil in a pan over medium-high heat.
  5. Sauté the marinated chicken for about 6-7 minutes on each side until fully cooked.
  6. Remove the chicken and allow it to rest, then slice it.
  7. Combine the cooked rice, avocado, red onion, and cilantro in a bowl. Mix gently.
  8. Layer the rice mixture on plates and top with sliced chicken.
  9. Garnish with lime wedges before serving.

Notes
