Ingredients

- 2 medium beets, peeled and grated
- 1 onion, diced
- 2 carrots, diced
- 1 potato, diced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 2 tablespoons vinegar
- Salt and pepper to taste
- Fresh dill or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the onion, carrots, and bell pepper. Sauté until softened.
- Add the grated beets, potato, and vegetable broth. Bring to a boil, then reduce heat to simmer.
- Stir in vinegar, salt, and pepper. Let simmer for about 30 minutes until the vegetables are tender.
- Taste the soup and adjust seasoning if necessary.
- Serve warm, garnished with fresh dill or parsley.
