Ingredients

  • 2 tablespoons olive oil
  • 4 salmon fillets
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1/4 cup fresh basil, chopped

Instructions

  1. Heat olive oil in a pan on medium-high. Season salmon fillets with salt and pepper, then place them skin-side down and cook until crispy and golden.
  2. Remove salmon and melt butter in the same pan. Sauté minced garlic until fragrant.
  3. Add cherry tomatoes, followed by the heavy cream, and let simmer.
  4. Stir in salt, pepper, basil, and Parmesan cheese until creamy. Add spinach and let it wilt.
  5. Nestle the salmon back in and spoon sauce over the fish. Allow to combine for a minute before serving.

Notes
