- 1/2 cup (115g) unsalted butter
- 4 oz (115g) semi-sweet chocolate, chopped
- 2 large eggs
- 2 large egg yolks
- 1/4 cup (50g) granulated sugar
- 1/4 cup (30g) all-purpose flour
- 1 tsp vanilla extract
- Pinch of salt
- Powdered sugar, for dusting
- Vanilla ice cream or whipped cream, for serving
- Fresh berries, for serving
Instructions
- Preheat oven to 425°F (220°C). Grease 4 ramelets with butter and dust lightly with flour or cocoa; tap out excess.
- Melt butter and chopped chocolate together until smooth using a microwave in 20-second bursts or a double boiler.
- Whisk eggs, egg yolks, and sugar until pale and slightly thickened. Fold in chocolate mixture, vanilla, salt, and sifted flour until just combined.
- Divide batter into ramelets and place on a baking sheet. Bake for 10–12 minutes until edges are set and centers jiggle slightly.
- Let rest for 1 minute, run a knife around the edges, then invert onto plates. Dust with powdered sugar and serve immediately with vanilla ice cream and berries.
Notes
Chill ramelets briefly for a thicker outer cake. Use high-quality chocolate for best flavor.
