- 1/2 cup cold butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1/4 cup cornstarch
- 1 tsp baking powder
- 1 tsp vanilla extract

Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 pan with parchment paper.
- Cream the cold butter with granulated and brown sugars until airy and pale.
- Beat in the egg and vanilla extract until glossy.
- In a separate bowl, mix the flour, cornstarch, baking powder, and salt; gradually add to the wet mixture until just combined.
- Press two-thirds of the dough into the pan for an even base, adding mix-ins if desired.
- Dollop the remaining dough on top, spreading gently for pockets of dough.
- Bake for 22-28 minutes until golden and edges are crisp but center jiggles slightly.
- Let cool for at least 15 minutes before slicing to maintain gooey centers.
Notes
Do not overbake to avoid a dry center, and chill the dough if your kitchen is warm to keep edges crisp.
