Description

These snack squares feature a crackly top, shatteringly crisp edges, and a gooey center, perfect for any craving.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cold butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/4 cup cornstarch
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 pan with parchment paper.
  2. Cream the cold butter with granulated and brown sugars until airy and pale.
  3. Beat in the egg and vanilla extract until glossy.
  4. In a separate bowl, mix the flour, cornstarch, baking powder, and salt; gradually add to the wet mixture until just combined.
  5. Press two-thirds of the dough into the pan for an even base, adding mix-ins if desired.
  6. Dollop the remaining dough on top, spreading gently for pockets of dough.
  7. Bake for 22-28 minutes until golden and edges are crisp but center jiggles slightly.
  8. Let cool for at least 15 minutes before slicing to maintain gooey centers.

Notes

Do not overbake to avoid a dry center, and chill the dough if your kitchen is warm to keep edges crisp.
